The SurroNovTM Innovation

At Novolyze, we have developed a wide range of ready-to-use surrogates for process validations based on our dry technology.
Qualified surrogates for target pathogens and kill-steps are produced in industrial quantities following strict procedures that ensure the homogeneity and quality of our products. Subsequently, SurroNov™ surrogates are formulated with food grade ingredients to stabilize them, while ensuring initial inoculation levels and their thermal behaviors remain the same. All SurroNov™ surrogates are BSL1 microorganisms.

A number of advantages

Our dry technology provides a number of advantages when compared to liquid surrogate inoculation for process validations:
 
Adaptability of a wide range of matrices: the dry nature of SurroNov™ reduces the impact on the physical-chemical properties of the food matrix;
 
Simplified preparation on site: our dry surrogates can be directly incorporated into a food matrix without an enrichment step;
 
 Guaranteed inoculation concentration and more favorable heat resistance to the target pathogen compared with liquid surrogates;
 
 Increased inoculation level: due to the quality and performance of our manufacturing procedures we are able to reach higher inoculation levels than liquid surrogates inoculation methods (up to 1010CFU/g);
 
 Increased stability and shelf-life of SurroNov™ surrogates
Our products are stable for several months.

HIGH PERFORMANCE SURROGATES

The performance of our surrogates has been proved by intensive research on numerous food matrices. The above graph demonstrates the thermal death rate on kernel pistachios of two of our surrogates, SurroNov™ 5312 and SurroNov™ 1822 (E. faecium), in comparison with four different Salmonella serotypes and with the E. faecium 8459 liquid inoculum (Almond Board of California guidelines). Results prove that the behavior of our dry E. faecium surrogate (SurroNov™ 1822) is not only comparable to the liquid inoculum surrogate but also has a more favorable kill-ratio.
Among our catalogue of surrogates (SurroNov™) we have identified a number of strains having a better performance than the liquid E. faecium 8459. Specifically in this graph our dry surrogate SurroNov™ 5312 shows a thermal death dynamic better correlated to the Salmonella serotypes than the two tested E. faecium surrogates.
